Gluten Intolerance
Gluten intolerance occurs in a person who is unable to digest gluten, a protein
found in wheat, rye, barley and oats. The gluten molecule is very large, relative
to other food molecules, and can be extremely difficult to digest.
The
problems and symptoms begin when gluten reaches the small intestine. Common gluten
intolerance symptoms are gastrointestinal such as diarrhea, flatulence, and bloating.

When left
untreated, gluten intolerance will actually tears holes, somewhere in the lining

Celiac
Disease was the first type of gluten sensitivity for which diagnostic testing
was devised, in the 1940's. Although Celiac testing is still used in many
clinics as a first test for gluten intolerance, it picks up only a small percentage
(approximately 0.5% of the population) of gluten intolerant people, who are actually
Celiac.
Most gluten intolerant people test negative (or inconclusive) for Celiac
Disease. They are then labeled Non-Celiac Gluten Sensitive, and may be
