Pumpkin seeds have a very high oil content at 50%. Four fatty acids – palmitic, stearic, oleic and linoleic – make up 98% of the fatty acid in pumpkin seeds.
Palmitic acid has excellent antioxidant properties – unlike trans fats, palmitic acid is a saturated fat that helps with protein localization in cellular membranes. A Canadian study in 2004 in the Asian Pacific Clinical Journal of Clinical Nutrition concluded that palmitic acid does not raise cholesterol levels in healthy individuals when combined with the linoleic fatty acid which is also found in pumpkin seeds.
Linoleic acid supports healthy skin, hair and speeds wound healing.
Oleic is a monounsaturated fatty acid that inhibits cholesterol synthesis and has been shown to lower the risk of heart disease. Since pumpkin seeds are a good source of polyunsaturated and monounsaturated fats, they are helpful in reducing HDL cholesterol levels. The Harvard School of Public Health stated that they can aid in inflammation reduction and maintain steady heart beat.
Pumpkin seeds are a great source of tryptophan, manganese, magnesium, phosphorus, copper, protein, zinc, and iron. Magnesium is beneficial to nerve and muscle function.
The B vitamins, and vitamin K, are high in pumpkin seeds.
Vitamin K regulates calcium absorption and contributes to healthy bones.
Vitamin E, especially as tocopherol, is highly concentrated in pumpkin seeds, and is an effective anti-inflammatory and antioxidant.
Benefits of pumpkin seeds include help with heart and prostate function. When testosterone stimulates prostate cell multiplication, a byproduct of this process called dihydrotestosterone (DHT) that contributes to male baldness and benign prostatic hypertrophy (BPH).
Pumpkin seeds appear to aid in the disruption of the dihydrotestosterone effect on the prostate.
The high zinc content is suggested to be helpful for bones and especially aging men and women where low levels of zinc are associated with hip fractures.
