Golden Berries (Physalis peruviana) can be used in a wide variety of recipes such as smoothies, baking, salads and soups.
Growing Golden berries are native to Peru’s high altitudes where the fruits grown on carefully managed family farms. When the plants have flowered the berry ripens for three to four months before being picked.
Harvesting and Drying When the berries have fully ripened they are hand picked and set aside for washing. Since the calyx protects the Golden Berry so well while it grows the fruit only needs minor cleaning after being harvested. The berries are simply rinsed with water, drained and set aside for drying. The cleaned and dried berries are dehydrated in batches at super low temperatures (under 113 degrees) to preserve their natural flavor and nutritional content. The result is a chewy, tart and sweet berry.
